Dinners This Week || Recipes and Resources

 Hey hey! If you've popped over from YouTube, here are the recipes from my last video, nothing fancy, but I hope it gives you some meal planning inspiration! Recipes that I've written or borrowed from family are written out, recipes that are linked are clickable in the title.

Mini Meatloaves, Funeral Potatoes, Cucumber Salad, Fruit

 Meatloaf Recipe:
2 lbs ground beef
2 eggs
1 1/2 cup bread crumbs
3/4 cup Ketchup
1/2 cup warm water
1 envelope onion soup mix
8 oz tomato sauce


Mix all the ingredients, minus the tomato sauce, by hand in a big bowl. Kids love helping with this part. Put into a loaf pan (or muffin tins) and slap by hand profusely until you are POSTITIVE all air pockets are out of the loaf. Pour sauce on top and bake at 350 for 1 hour (about 30 mins in muffin tins). Can be frozen in chunks or whole.

Cucumber Salad:
Mix together and chill: 
1 cup each cucumbers and avocado
1/2 cup tomato
Sliced red onion (to taste)
Chopped cilantro (again, as much as you'd like)
Juice of one lemon
2 T olive oil
Salt and Pepper to taste




Grouper Parmesan, Leftover Potatoes, Cucumber Salad...again!

 Tostadas

Tostadas are my go-to easy meal. Just grab some tostada shells (baked or traditional), top with seasoned black beans and cheese, bake to melt the cheese, and top like tacos!

French Toast, Bacon, Fruit

 I used THIS French Toast recipe with the chocolate chip brioche loaf from ALDI, and I'm NEVER doing it any other way ;)

Banana Bread and Protein Smoothies


We had one heck of a cold pass through us, so on this night I milled some wheat, made a few loaves of banana bread (one to freeze, too) and made quick smoothies with Orgain protein powder, almond milk, bananas, and spinach. I haven't found a banana bread recipe that I just adore, so I use various recipes, but I watch the cooking time, as substituting whole wheat for white means it dries out fast.
