"Crispy Every Time" Fried Fish

Ingredients:

  • 1 lb fish (we use fresh cod)
  • salt to season
  • 1 egg
  • 1/2 bottle of beer
  • 1/2 cup flour
  • 1 tsp garlic powder
  • salt and pepper
  • Corn Flake cereal
  • blackening seasoning, cayenne pepper, OR a mild seasoning such as nature's seasoning or everglades fish seasoning
  • oil for frying
Directions:
  • Heat oil to 375
  • Cut fish into strips and season with salt
  • Mix batter by combining egg, beer, flour, garlic powder, salt, and pepper until it resembles pancake mix
  • In a separate bowl crunch two cups of corn flakes by hand and add seasoning of choice, about one tablespoon
  • dip fish in batter, then corn flakes, then drop into hot oil
  • let cook about 4-6 minutes, until flaky inside
  • enjoy!
For Tartar:
Mix one cup of PLAIN greek yogurt with about two tablespoons of relish and the juice of a half of a lemon, add salt to taste, and allow to sit in refrigerator until you serve fish.
