Strawberry Spelt Muffins

Before I even start - what in the heck is spelt?!

We visited a local kind-of-organic (organic practices but not organic seedlings) strawberry patch Saturday with the kids. They filled their buckets up FAST, and $28 and 8 pounds of berries later...I've been left with more berries than I know what to do with. And thus...



Ingredients:
  • 1/2 cup melted butter (you could sub oil, but butter is a "real" food)
  • 1 cup room temp milk
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp salt
  • 4 tsp baking powder
  • 1 cup sugar 
  • 3 1/2 cups spelt flour
  • 1 tsp cinnamon
  • 1 1/2 cups chopped strawberries
Directions:
  1. Mix butter, milk, vanilla, and eggs with wire whisk
  2. In a separate bowl, combine remaining ingredients, minus the berries
  3. Incorporate wet and dry ingredients until evenly combined, do not over mix 
  4. Fold in berries
  5. Fill paper lined cupcake tins 2/3 full
  6. Bake at 375 for 25 minutes
  7. Allow to cool before serving, as berries will be "mushy" right out of the oven
