Dinner Tonight: Blueberry Banana Waffles


Oh Wednesday, dreaded middle of the chaos Wednesday...to celebrate? It's breakfast for dinner around here today! Here's a little something my girlie and I whipped up with some extra ingredients we had on hand:



The Waffles:
Ingredients:
  • 2 Cups King Arthur White Whole Wheat Flour
  • 3 Tablespoons sugar or honey
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/2 cups buttermilk
  • 1/2 stick melted butter
  • 2 eggs, lightly beaten
  • 2 teaspoons vanilla extract
  • 2 mashed bananas
  • 1/2 cup frozen or fresh blueberries
Directions:
  1. Combine wet (including bananas) and dry ingredients separately
  2. mix wet ingredients into dry ingredients until well blended
  3. fold in berries gently so you do not dye the batter blue
  4. pour about 3/4 cup into waffle iron and cook according to manufacturer instructions (about 6 minutes in mine) 



Maple Cinnamon Whipped Cream:
Ingredients:
  • 1 1/2 - 2 cups Heavy Whipping Cream
  • 1/4 cup maple syrup
  • 1 teaspoon cinnamon
Directions:
  1. Whip cream in a cold bowl on high speed until stiff peaks form
  2. Add maple syrup and cinnamon and continue to whip for about 15 seconds, or until well blended
MMM! No dipping syrup, and still kid approved!!!
