Waldorf Quinoa with Maple Vinaigrette!

Stumbled across this recipe a few weeks ago and stuck it in the back of my head as a "go to" meal. I made a few changes and also added some chia seeds to the vinaigrette. We had a nice long beach day today and only about an hour between to get to church on time, so I cooked this one up - thought I'd share with you!

Waldorf Chicken Quinoa:

Ingredients needed:

  • 2 cups shredded chicken (threw mine in the crock pot on the way to the beach)
  • 2 cups Quinoa
  • 2 cups chopped apples
  • 1 cup chopped walnuts
  • 1 cup raisins
 For the Vinaigrette:

equal parts Apple Cider Vinegar, Mayo, Apple Juice, and Maple Syrup (I used 1/3 cup of each), and 3T Chia seeds (optional)

Directions:

Boil quinoa (2 parts water/1 part quinoa) for 15 minutes, reducing heat after the first few minutes. Meanwhile, chop apples and walnuts, and shred chicken. Whisk together the vinaigrette and set aside. Mix cooked quinoa with the apple, walnut, raisin trio, add chicken, and top with the vinaigrette. Serve warm or cold!
