We are a family that loves peppers and onions. Pizza? Peppers and onions. Omelets? Peppers and onions. Burgers? Peppers and onions! Here's a Christmas colored casserole that you can take with you to any of those weekend before Christmas potlucks!
Ingredients:
- 2-3 lbs chicken breast, uncooked and cut in slices
- 2 green bell peppers, sliced
- 1 red bell pepper, sliced
- 1 red onion, sliced
- 2 Tbsp olive oil
- Cumin (I used about 2 t)
- Chili Powder (I used about 2 t)
- 1 t garlic powder
- Salt and pepper
- monterey jack cheese, to garnish
Directions:
- Cube or slice chicken and toss with salt, pepper, chili, cumin, and garlic powder. Lay in bottom of baking dish
- toss peppers and onion in olive oil and lay on top of chicken mixture
- Bake at 375 for 25 minutes, or until chicken is cooked.
- Shred cheese on top and continue baking for 5 minutes
- serve over rice or eat as is!
