Meal Planning Motivation || April 2019

Hey y'all! Welcome back for another round of Meal Planning Motivation! If you haven't watched my video, go ahead and pop over to YouTube and do just that. Here are the recipes that go along with that video. The first few recipes are from the 100 Days of Real Food on a Budget cookbook that you can purchase on Amazon:

Leftover Meatballs and Whole Grain Pasta

Simple cheese quesadillas with Tortilla Land tortillas (the best) and toppings

1 Pie Shell or THIS recipe
2 Cups Broccoli Chopped
8 oz cheddar cheese, shredded
2 tsp dried minced onion
6 eggs
1/2 cup heavy cream (or whole milk works fine)
salt and pepper to taste

Mix broccoli, cheese, and onion and fill crust (it may look like too much filling, but will cook down). Mix eggs, cream, salt, and pepper, and pour over top. Bake at 350 for about 45 minutes until firm in the middle.
