Ingredients (makes 8 lunches):
- 4 boneless chicken breasts
- 2 cans organic black beans
- 2 cans organic corn kernels
- 1 red onion, chopped
- 2 tomatoes, chopped
- cilantro
- 4 limes
- cumin
- chili powder
- salt and pepper
Directions:
- season chicken with salt, pepper, cumin, and chili powder and grill or bake until internal temp is 165
- while chicken is cooking, chop onion and tomatoes, drain and rinse beans and corn, and chop cilantro
- combine beans, corn, onion, tomatoes, cilantro, and the juice of two limes to make salsa
- scoop salsa into container, lay sliced chicken breasts over, garnish with more cilantro and a lime wedge
