BBQ Chicken and Cornbread Waffles

It's the day after Easter, lets be honest, nobody wants to be in the kitchen anymore! Today I am sharing one of my favorites with you again - so get outside and enjoy this weather, the croc-pot will take care of ya!

Fun food . . . EASY fun food! That's what life's about with little ones - here's my go-to "busy day" fun family dinner!



For the chicken:

Ingredients:

  • 4-6 boneless skinless chicken breasts (fresh or frozen)
  • 1 Yellow Onion
  • Bottle of your favorite bbq sauce 
Directions:

This one is a little too easy: Place all ingredients in the slow cooker, cook on low 6-8 hrs, pull apart with a fork.

Cornbread Waffles:

Genius. Took me WAY too long to experiment with something other than waffles in my waffle iron. This little gem turned out perfect on the first try - nice mix of crunch on the outside and soft on the inside! This is just our everyday sweet cornbread recipe, so I'm assuming that any cornbread boxed mix will work all the same. 

Ingredients:
  • 1 cup flour
  • 1 cup cornmeal
  • 1/2 cup sugar
  • 1 tsp salt
  • 3 1/2 tsp baking powder
  • 1 egg
  • 1 cup milk
  • 1/3 cup oil
Directions:
  1. Preheat waffle iron
  2. Mix wet and dry ingredients separately
  3. Combine wet and dry ingredients and stir until no longer lumpy
  4. Pour one cup of batter into waffle iron and close. Our waffle iron light turns off when waffle is done, this usually takes about 3-4 minutes.
That's all, folks! Just Top your waffle with some bbq chicken and any toppings of your choice (cilantro, green onions, cheese, etc) and you have yourself a quick and easy dinner!
