We visited a local kind-of-organic (organic practices but not organic seedlings) strawberry patch Saturday with the kids. They filled their buckets up FAST, and $28 and 8 pounds of berries later...I've been left with more berries than I know what to do with. And thus...
Ingredients:
- 1/2 cup melted butter (you could sub oil, but butter is a "real" food)
- 1 cup room temp milk
- 2 eggs
- 1 tsp vanilla
- 1 tsp salt
- 4 tsp baking powder
- 1 cup sugar
- 3 1/2 cups spelt flour
- 1 tsp cinnamon
- 1 1/2 cups chopped strawberries
Directions:
- Mix butter, milk, vanilla, and eggs with wire whisk
- In a separate bowl, combine remaining ingredients, minus the berries
- Incorporate wet and dry ingredients until evenly combined, do not over mix
- Fold in berries
- Fill paper lined cupcake tins 2/3 full
- Bake at 375 for 25 minutes
- Allow to cool before serving, as berries will be "mushy" right out of the oven
