Oh Wednesday, dreaded middle of the chaos Wednesday...to celebrate? It's breakfast for dinner around here today! Here's a little something my girlie and I whipped up with some extra ingredients we had on hand:
The Waffles:
Ingredients:
- 2 Cups King Arthur White Whole Wheat Flour
- 3 Tablespoons sugar or honey
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/2 cups buttermilk
- 1/2 stick melted butter
- 2 eggs, lightly beaten
- 2 teaspoons vanilla extract
- 2 mashed bananas
- 1/2 cup frozen or fresh blueberries
Directions:
- Combine wet (including bananas) and dry ingredients separately
- mix wet ingredients into dry ingredients until well blended
- fold in berries gently so you do not dye the batter blue
- pour about 3/4 cup into waffle iron and cook according to manufacturer instructions (about 6 minutes in mine)
Maple Cinnamon Whipped Cream:
Ingredients:
- 1 1/2 - 2 cups Heavy Whipping Cream
- 1/4 cup maple syrup
- 1 teaspoon cinnamon
